Kartoffelsalat – Potato Salad

Ingredients:
- 1 kg potatoes
- 1 onion
- 1 tablespoon mustard
- 4 tablespoons white wine vinegar
- 4 tablespoons sunflower oil
- 2 dl vegetable broth, hot
- 1.5 - 2 teaspoons salt
- a pinch of Pfeffer seasoning (black and white ground pepper, cayenne pepper)
- ½ cucumber or a small salad cucumber
- 2 bunches of chives
Instructions: Boil the potatoes and peel them while hot. Slice them into pieces about 5 mm thick and place them in a bowl. Mix the chopped onion with mustard, vinegar, oil, and broth. Season with salt and pepper. Pour the sauce over the potatoes and let it rest for 30 minutes. Meanwhile, peel the cucumber, cut it lengthwise in half, remove the seeds, and slice it into pieces about 3 mm thick. Finely chop the chives. Add the chives and cucumber to the salad. Enjoy your meal!
