Ingredients:
- 2 onions
- 1 clove of garlic
- 300 g potatoes
- 400 g carrots
- 600 g green beans
- 3 sprigs of thyme
- 350 grams of lean beef
- 250 g smoked bacon
- 2 tablespoons sunflower oil
- 1.5 l vegetable broth
- 2 bay leaves
- salt
- pepper
- 2 tablespoons white wine vinegar
Instructions:
- Clean and peel the vegetables. Finely chop the onion and garlic, and dice the potatoes and carrots. Cut longer beans in half. Rinse and dry the fresh thyme.
- Dice the meat and bacon. Heat the oil in a pot. Fry the bacon until crispy, about 5 minutes. Sear the meat quickly and intensely. Add the onion, garlic, and potatoes, and sauté for about 2 minutes.
- Pour in the broth and bring to a boil. Reduce the heat and simmer for about 20 minutes. Add the bay leaves and thyme, and season with salt and pepper.
- After about 5 minutes of cooking, add the beans and carrots, and continue cooking until done. Season with salt, pepper, and vinegar.
